Make the most of your veg patch with this easy one-pot dish

8 baby potatoes, sliced
3 red onions, diced
1 red pepper, chopped
3 chillies, deseeded and sliced
100g mushrooms, sliced
1 courgette, diced
1200g tomatoes, chopped
 ½ garlic clove, crushed
1 tablespoon tomato puree
1 ½ tablespoons dried oregano
1 ½ tablespoons of basil
3 ½ tablespoons olive oil, divided
200ml vegetable stock
1 crusty loaf


1. Preheat oven to 200 C / Gas 6.

2. In a large saucepan, fry the potatoes in 2 tablespoons of olive oil for 10 minutes. Add 1 ½ tablespoons olive oil. Add the onion, peppers, chillies, and mushrooms, fry for a further 4 minutes.

3. Add the courgettes and fry for a further 3 minutes. Finally add the chopped tomato, garlic, tomato puree, basil, oregano and veg stock. Stir thoroughly before placing in a casserole dish.

4. Cook in the preheated oven for 35 to 40 minutes. Check to see if potatoes are soft.

5. Heat up crusty bread, slice and butter it; serve 2 slices with each plate.

1 1/8 cups all-purpose flour
6 tablespoons butter
½ cup rolled oats
6 tablespoons packed brown sugar
21 ounces cherries (3 large handfuls)
1/8 teaspoon salt


  1. Preheat oven to 190 C.
  2. Melt butter or margarine in a large saucepan. Remove pan from heat; stir in oats, flour, brown sugar, and salt until a dry, crumbly dough forms. Press about 2/3 of the dough into the bottom of 9 inch square pan, making a firm, even layer.
  3. Spread cherry pie filling in the crust and sprinkle with remaining crumb mixture.
  4. Bake for 40 to 45 minutes, until top is lightly browned. Serve warm or at room temperature.
